Watermelon, Mint & Feta Salad

Ingredients

1.5kg seedless watermelon

1 Lebanese cucumber, halved lengthways, chopped

200g Greek or Danish feta, cut into 2-3cm cubes

¼ cup fresh mint, roughly chopped (plus extra to serve)

2 tbsp extra virgin olive oil

1 tbsp white wine vinegar

Pinch salt and pepper

Method

  1. Cut watermelon (removing peel) into 2-3cm cubes
  2. Place watermelon in a large bowl and add cucumber,     feta and mint, then toss to combine.
  3. Transfer to a serving dish. Top with extra mint.
  4. Combine oil and vinegar in a small bowl, season.      Drizzle over salad and serve.
