Melon Icy Poles

Makes 3-4 icy poles (depending on size)

Note. This makes about 14 ice cubes.

Ingredients

200g chopped melon, peel and seeds removed (try seedless watermelon, honeydew, rockmelon or piel de sapo)

50mL coconut water

Splash fresh lime juice (optional)

1-2 tbsp honey (optional)

Method

  1. Blitz the coconut water and watermelon together.
  2. Pop into ice block moulds with a stick and freeze     for at least four hours, or ideally overnight.
